You will find curries, meat dishes, and succulent kebabs blooming with a romantic aroma that will make your cravings uncontrollable. The food culture of Urdu people has evolved over the centuries and has offered a range of flavorful items, making it one of the most beloved cuisines of South Asia.

With its rich cultural heritage, Pakistani dishes have surpassed the boundaries of its country and have made millions of people satisfy their appetites worldwide. So, if you love experiencing different spices and flavors, you cannot miss out on Pakistani food.

However, food for Urdu people is beyond just delicious cuisine. Their practices of preparing and concocting dishes are rooted in their history and local customs. So, today, we will walk through the Urdu food culture with a closer look at the traditions and customs.

I am sure our previous blog, famous food items of Pakistan , has already given you a brief idea. So, if you are interested to learn more about the food culture of Pakistan, continue reading!

Food Culture Of Urdu People: Geographical Influence

Although the taste of Pakistani cuisine is true to its original roots, it has been shaped by its geographical location and cultural history. Since Pakistan was once a land in India and has multiple religions and ethnicities, the development of the food culture revolves around these factors.

One of the most influential elements that we find in Pakistani cuisine is the inculcation of spices like cumin, coriander, turmeric, and cardamom. These spices and their adoption mainly lead to the cultural practices of its bordering countries, India, Afghanistan, and India.

Even the use of rice dishes, flatbread, and other ingredients like black pepper, chili powder, and more are a factor of the geographical influence of its neighboring counties. Although Pakistani dishes have their own hint of blending flavors, the introduction to different species has been a part of the regional cooking traditions.

Another major factor that led to the evolution of Pakistani food is colonialism. When colonialism came to India, the time Pakistan and India were one nation, many dishes were adapted to suit the preferences of the British members. This led to the vehement fusion of many different flavors, which then provided unique versions of all dishes.

While the dish biriyani, the famous rice dish of India and Pakistan, was first brought by the Mughals of Persia, the use of long-grained basmati rice was the concoction of British preferences. Hence, many dishes got mixed and matched, and new ways of preparing and serving them were founded.

Lastly, there will always be confusion regarding the items of Indian cuisine and Pakistani food recipes. Although both countries have similar cooking practices like the tandoor oven, use of fresh fruits in desserts, and garam masala, also because they once shared the same roots, there is a slight difference between the two. You will find Pakistani dishes using fewer spices than Indian items. The use of mustard seeds and Asofoetida, along with cumin and curry leaves are more intense in India than in Pakistan.

Another difference is the use of minced meat and heavily meat-based items in Pakistan. Indians use more vegetables and a range of herbs in different items. So, you can see that despite similarities, Pakistani culture will always have unique food traditions.

Staple Food Of Pakistan

Let us talk about the staple food of Pakistan and some popular dishes that are rooted in the everyday life of the Urdu people.

Rice – Chawal

Just like any other Asian country, Pakistan is a fan of rice too. You will find so many famous and intriguing dishes in Pakistan that are mainly rice based. Especially Pakistani rice, the long-grained Basmati rice, with an interesting aroma, is the most popular rice that is used in every other dish.

The Pakistani chicken biriyani , a combination of chicken and rice, is the most loved and popular rice dish in the country. Especially in the Karachi and Peshawar region, it is one of the signature dishes. It is prepared on the steam of chicken curry and boiled rice, along with brown onions and lemon juice. You will find many versions of Biriyani in Pakistan.

Some of the most popular ones are the beef biriyani, white biriyani, and pulao biriyani. There is also a dish called tahari , which is made of yellow turmeric rice. If you are vegetarian, Pakistani tahari is a good option for you. All in all, Biriyani is a traditional dish of Pakistan, and you will find this in every household, mainly during lunch and dinner.

Vegetarian pulao is another popular dish made of rice that is a gem for vegetarian people. Although there are rarely any vegetarian dishes in Pakistan, since almost every person is a non-vegetarian, you will find a few items like this that are equally good. It is a combination of rice and vegetables cooked with extra ghee and aromatic spices. If you love dishes like fried rice, you will fall in love with this.

Apart from rice, another comfort food of the Pakistani people is flatbread. You will find this item even in the Indian subcontinent, where every household cooks it for lunch and dinner. Similarly, the Lahore city of the Punjab province of Pakistan is the carrier of this staple food. One of the most famous traditional Pakistani dishes, a variant of flatbreads, is the butter naan . It is also called tandoori naan, prepared in a tandoor oven for a long time, hence the name. Otherwise, you will find rotis , which is another kind of flatbread, popular in India, made in a flat or slightly concave iron griddle.

Butter naan is usually consumed with a meat curry, usually lamb meat, as the main dish. It is savory and filling, which is why it is mostly served during lunch or dinner. When it comes to breakfast, you will find a different version of flatbread called parantha . It is golden brown and made with a combination of layered dough of whole wheat flour and stuffings like boiled chickpeas, boiled potatoes, garlic, onion, and many more. It is served with pickles, butter, and seasonal fruits.

First of all, let us be clear that mutton or lamb meat means the meat from a sheep that is older than two years and is much darker with bold flavors that settle as it is slow-cooked. With this being said, mutton is one of the most sought-after or staple items of the Pathans of the Khyber Pakhtunkhwa province, as sheep are reared in that region. Meat plays a dominant role in the Pakistani cuisine. Especially when it comes to Mutton, Pakistan is the highest consumer of this meat compared to other South Asian countries.

From Mutton nihari to Mutton biriyani, you will find mutton as a main item in a lot of dishes. Some of the most popular mutton dishes are balti gosht, Pakistani bhuna gosht, and mutton karahi . These savory dishes are served with spiced rice, flatbreads, fresh salad, yoghurt, and sometimes, rice pudding.

Other than lamb or mutton, other meats like chicken, beef, and fish play a major role in the cuisine. However, one thing to be strictly aware of is that you cannot eat pork. According to Islamic traditions, pork is a forbidden food. And anyone who consumes it is disowned by the community.

As we are talking about the comfort food of Urdu people, another famous dish that the locals die for is Kebab. It is more of a type of preparation than an item. Kebab is where you mince meat and flatten them or roll them into patties or thin sausages. There are chapli kebabs – made of ground beef, and sheek kebabs – made of lamb meat, found in almost every Pakistani restaurant. It is even a popular part of Pakistani street food, and every average Pakistani society cooks kebabs whenever they have guests over.

You can consume kebabs individually or with flatbreads and rice. It is a delicious delicacy that will water your mouth from miles away.

Food culture of Urdu people - Ramadan

Time Of Ramadan

One of the major traditions in the Islamic world is seen in the month of Ramadan. This month is the ninth month in the Arabic calendar and is considered the holiest month. During this month, 29-30 days, Muslim people fast as an act of worship to Allah. The purpose behind this is to teach oneself self-discipline and empathy. People during this time fast and ask for strength and forgiveness for their families.

People fast the entire day till sunset during Ramadan. They do not drink, eat, or even swallow their saliva during the daylight hours. However, once it is sunset, they have their meal, known as Iftar . And just before dawn, they have another meal, after which they fast for the entire day.

The Iftar is a very special meal. They break their fast with this meal. Traditionally, three dates are taken to break the fast. Then, the celebration begins and is often done as a community meal with family members and friends gathering to eat and break their fast together. Some of the most popularly served dishes during Iftar are keema samosas, chicken biriyani, parantha and chickpeas, fruit chaat, lamb kebabs, halwa puri with desi ghee, traditional desserts like sheer korma, sewaiyan, suji ka halwa, and more.

So, having a meal together in Pakistan has a deep-rooted religious background and is not just about the deliciousness of the food. However, we can never overlook how unique and flavorful the dishes are.

Pakistani Cooking Methods

Here is a list of traditional cooking methods for Pakistani dishes.

Bhunai : It is used to cook meat by removing excess water from the item and later used to enhance flavor. Mutton Bhunai is a popular dish in Pakistan, usually served with Roomali roti.

Tarka : It is a way of adding a small amount of ghee or oil to a pan on high heat and then cooking onion, garlic, and ginger. After that, the required ingredients are cooked with the burnt mix. From dal (lentils) to meat curry, a lot of dishes are made using this method.

Dum : It is a way where the items use their juice to cook themselves. It uses low flame, where slow cooking makes the meat pieces very tender and delicate to eat. Aloo dum biriyani and chicken dum biriyani are some popular examples.

Tandoori : As mentioned earlier, it uses a tandoor oven, where a direct fire at the bottom heats the walls of the tandoor and cooks the dough pasted on the sides. This is how tandoori roti is made. Even with chicken, the chicken pieces are inserted in the oven with skewers and heated up over direct fire.

Essay on Food

Essay on Flood in Urdu

(Conclusion)

Second Life

How a Novelist Became a Pop Star

In fiction, Ali Sethi wrote about being queer in Pakistan. Now he’s singing his story.

“I hope you fall in love, I hope it breaks your heart” is the refrain (in English translation) of “ Pasoori ,” Ali Sethi’s 2022 global hit. Is this a curse or a blessing? The song, performed as a duet with the Pakistani singer Shae Gill, defies such simple classifications — it’s a pop banger sung in Urdu and Punjabi, punctuated with flamenco handclaps and driven by a reggaeton beat. Sethi, a Pakistani-born artist who lives in Manhattan’s East Village, composed it in the wake of a thwarted collaboration with an Indian organization that feared reprisal (because of a 2016 ban on hiring Pakistani creatives). Drawing on themes from ghazals — sly courtesan poems about desire and betrayal that have doubled as political critiques, a genre that dates to seventh-century Arabia — “Pasoori” is at once “a love song, a bit of a flower bomb thrown at nationalism, a queer anthem, a protest song, a power ballad [and] a song of togetherness,” Sethi says. It’s now been viewed some 850 million times on YouTube, including by countless Indian fans.

Sethi, 39, is a master of microtonal singing, gliding between the notes of the Western tempered scale. He’s been lauded for sounding like a vestige of another age — his supple, keening tenor the result of years of apprenticeship to the Pakistani artists Ustad Saami and Farida Khanum. Growing up in Lahore, where he was recognized at school for his academic and artistic abilities but also, he says, “taunted by both students and teachers for being part of a queer cohort,” he found in traditional music a way to be good but also fabulous, rooted without being fixed.

Back then, he didn’t see the arts as offering a viable career path. As an undergraduate at Harvard in the early aughts, he was expected to study economics. He instead took courses on South Asian history and world fiction, and first read Jane Austen at the behest of his teacher Zadie Smith. In 2009, he published “The Wish Maker,” a semiautobiographical coming-of-age novel set in his home city. The narrator navigates the wounds and thrills of adolescence, as well as a factionalized, globalizing country, alongside his female cousin: They watch an “Indiana Jones” film (“about an American man of the same name who wore hats and enjoyed the company of blonde women”) and are puzzled by its Indian villain; they fuel their crushes with love songs by Mariah Carey and the Pakistani artist Nusrat Fateh Ali Khan.

Ali Sethi reclines in a chair in a wood-paneled room.

The book was well received, though Sethi now thinks its realist form couldn’t fully accommodate Pakistan, a society in flux. As he was finishing the novel in Lahore in 2007, the country was besieged by sectarian violence. His father, Najam Sethi — both he and Sethi’s mother, Jugnu Mohsin, are prominent journalists and publishers — received death threats, and Sethi spent over a year in hiding, staying in the basements of friends. In 2011, he traveled to India to work as an adviser on Mira Nair’s 2012 film, “ The Reluctant Fundamentalist ,” adapted from Mohsin Hamid’s 2007 novel. One evening, when everyone was eating and singing, Nair was so moved by Sethi’s version of a ghazal famously sung by Khanum, “ Dil Jalane Ki Baat ,” that she urged him to record it. The song became part of the soundtrack and the first step toward Sethi’s recording career.

Storytelling is still inherent to his work. Whether at concerts or on Instagram, Sethi often describes the inclusive nature of traditional South Asian music. Because it’s always been “anciently multiple” and cosmopolitan, it contains the “antibodies,” he says, to heal a divisive culture from within. But there are moments when he wishes to not represent but present for a while. He plans to write another novel, in the more experimental form of lyrical autofiction. Today, the burden of being an ambassador is lightened by the presence of other queer South Asian artists, including the writers Bushra Rehman and Sarah Thankam Mathews, and Sethi’s own partner, the painter Salman Toor. Last year, Sethi appeared at Coachella along with several other South Asian musicians, whose multilingual sets slotted right in alongside the Spanish artist Rosalía and Nigeria’s Burna Boy, who performed in English and their native languages.

On his forthcoming pop album, out this summer, Sethi sings in English, Urdu and Punjabi (the last being ideal for dance music, he says, because of its “lilt and thrust”). The project extends his “reggaeton meets raga meets contemporary global beats aesthetic,” he adds. The point isn’t a something-for-everyone hybrid but an alchemy that alters each element. What is reggaeton when it appears in “Pasoori”? Who is the Indian nationalist who falls in love with the song or has her heart broken open by it? The power of music to draw people together is an old story. But what they are drawn into , Sethi hopes, is a willingness to shape-shift.

An earlier version of this article mistakenly reversed the names of Ali Sethi’s parents. His father is Najam Sethi and his mother is Jugnu Mohsin, not vice versa.

Butylated Hydroxyanisole (BHA) in Food: Uses and Health Implications

This essay about the synthetic antioxidant BHA explores its widespread use in the food industry to prevent the oxidation of fats and oils, thereby preserving freshness. It delves into the controversies surrounding its safety and potential health risks, including its classification as a possible human carcinogen based on animal studies. Despite regulatory approval and assertions of safety at current usage levels, consumer preferences are shifting towards natural alternatives, reflecting broader concerns about processed foods and synthetic additives. As debates continue, both industry and consumers must navigate the complexities of synthetic additives in food, prioritizing safety and transparency.

How it works

Butylated hydroxyanisole, recognized as BHA, emerges as a synthetic antioxidant extensively employed in the alimentary sector to safeguard freshness by impeding the oxidation of fats and oils. Grasping the function and ramifications of BHA in our victuals can empower consumers to craft discerning dietary selections. While it fulfills a pivotal role in prolonging shelf life and upholding food quality, dialogues regarding its safety and plausible health repercussions persist.

BHA primarily functions to thwart rancidity in fat-laden victuals, impacting not solely taste and aroma but also preserving the nutritive essence of comestibles.

One encounters BHA across a spectrum of products including potato crisps, pastries, cereals, and even select meats. By deterring the oxidative degeneration of fats, BHA assumes a crucial stance in the commercial alimentary landscape where endurance and steadiness of products reign supreme.

The sanctioning of BHA by regulatory entities such as the U.S. Food and Drug Administration (FDA) and its inclusion in the Generally Recognized as Safe (GRAS) roster stems from an array of studies scrutinizing its effectiveness and safety. Nonetheless, the utilization of BHA remains ensconced in controversy. Scientific inquiries yield divergent outcomes concerning its prospective health implications, giving rise to debates and disparate regulations worldwide.

Foremost among the apprehensions encircling BHA is its purported role as an endocrine disruptor and its purported correlation to carcinogenic activity in animal models. Research endeavors conducted on rodents have intimated that elevated BHA dosages could precipitate cancerous developments in specific organs such as the forestomach, a faculty absent in humans. These revelations have spurred inquiries into the applicability of such findings to human well-being and the actual hazard posed by dietary BHA levels.

In response to these apprehensions, organizations such as the International Agency for Research on Cancer (IARC) have categorized BHA as a plausible human carcinogen, while underscoring the inconclusive nature of evidence gleaned from human studies. This classification predominantly hinges on evidence derived from animal experiments, with ongoing investigations delving into the repercussions of protracted exposure to minute BHA quantities in the human dietary milieu.

Despite the contentions, numerous experts and regulatory agencies assert that BHA remains benign at extant utilization levels in comestibles. The FDA, for instance, presides over the quantum of BHA permissible in victuals, ensuring it falls below thresholds adjudged safe predicated on the preponderance of scientific scholarship. These thresholds are tailored to curtail BHA exposure well beneath magnitudes that have elicited deleterious ramifications in laboratory fauna.

Consumer dispositions toward BHA exhibit variance, with certain factions electing to eschew synthetic preservatives entirely, gravitating towards “clean label” wares leveraging natural preservatives or none at all. This attitudinal shift among consumers reflects a broader propensity towards victuals perceived as more organic and less processed, prompting select manufacturers to reconfigure their offerings to obviate BHA and other artificial adjuncts.

To conclude, notwithstanding BHA’s role as an indispensable adjunct for preserving victuals’ integrity and lifespan, it epitomizes the intricacies and dilemmas inherent in employing synthetic additives across the alimentary spectrum. As scientific insights burgeon and consumer predilections metamorphose, the alimentary industry and regulatory authorities must navigate the confluence of benefits and putative health hazards posed by such adjuncts, ensuring that safety and transparency remain paramount. Consumers, in turn, are encouraged to remain apprised of the constituents comprising their victuals and to espouse choices aligning with their health predilections and ethical precepts.

Israel-Hamas war

May 12, 2024 - Israel-Gaza updates

By Amarachi Orie and Maureen Chowdhury

Our live coverage of the Israel-Hamas war has moved here .

Israeli military battles Hamas across Gaza as death toll passes 35,000 in the enclave. Here's the latest

From CNN staff

Smoke rises following Israeli bombardment in Jabalia in northern Gaza on Sunday, May 12.

The Israeli military has said that it began operating in northern Gaza overnight, and "precise operations" are continuing in eastern Rafah and near the Rafah crossing, as well as in the area of Zeitoun in central Gaza. The military action in Rafah comes ahead of a planned full-scale invasion.

The death toll in the Strip since October 7 has surpassed 35,000, the Ministry of Health said.

In northern Gaza, following calls Saturday to evacuate several areas, including Jabalya, the Israel Defense Forces said its troops began an operation "based on intelligence information regarding attempts by Hamas to reassemble its terrorist infrastructure and operatives in the area."

Video captured heavy gunfire, Israeli tanks and the sound of drones in the area of Jabalya early Sunday.

Here are the latest headlines:

  • US continues to warn against invasion of Rafah: Going “headlong into Rafah” could have dire consequences , US Secretary of State Antony Blinken warned Sunday. “Israel's on the trajectory, potentially, to inherit an insurgency with many armed Hamas left, or, if it leaves, a vacuum filled by chaos, filled by anarchy and probably refilled by Hamas,” he said on NBC.
  • UK also opposes on Rafah offensive: UK Foreign Secretary David Cameron has said he does not support Israel's plan for a full-scale offensive in the southern Gazan city of Rafah, but also opposes the idea of ending arms sales to Israel.
  • IDF chief says he carries "weight" of October 7 Hamas attack: IDF chief of staff Lt. Gen. Herzi Halevi said he bears "the responsibility for the failure of the IDF to defend our civilians on October 7." Halevi added, "I carry its weight on my shoulders daily, and in my heart, I fully understand its significance."
  • UN aid agencies running low on food: The head of the United Nations Humanitarian Agency in Gaza, warned that the UN's World Food Programme and the UN agency for Palestinian refugees (UNRWA) are likely to have run out of food aid in southern Gaza.
  • Thousands of bodies trapped under rubble: The Civil Defense in Gaza estimates about 10,000 bodies are trapped under the rubble of destroyed buildings in Gaza. Forty days after the withdrawal of Israeli forces from the vicinity of the Al-Shifa medical complex, “Civil Defense and medical staff are still retrieving bodies buried by the Israeli occupation forces in mass graves,” spokesperson Mahmoud Bassal said.
  • Israeli military says it has opened new aid crossing: The IDF announced the opening of a new humanitarian aid crossing into Gaza Strip in coordination with the US. "In accordance with the directive of the government of Israel and in coordination with the U.S. government, the 'Western Erez' Crossing was opened in the area of the northern Gaza Strip for the transfer of humanitarian aid to the residents of the Gaza Strip," the IDF said in the statement.

IDF chief of staff says he bears responsibility for failing to protect civilians on October 7

From CNN's Lauren Izso and Mohammed Tawfeeq

Israeli Chief of Staff Herzi Halevi attends a wreath-laying ceremony marking Holocaust Remembrance Day at the Yad Vashem Holocaust Memorial in Jerusalem on May 6.

Israel Defense Forces chief of staff Lt. Gen. Herzi Halevi said he bears "the responsibility for the failure of the IDF to defend our civilians on October 7."

Halevi's remarks came during a speech he delivered at Israel's Memorial Day ceremony held at the Western Wall in Jerusalem on Sunday evening.

Hamas' surprise attack on October 7 left Israel flat-footed, sparking a backlash that is still rippling through the country. The operation saw at least 1,500 Hamas fighters pour across the border into Israel in an assault that killed at least 1,200 Israelis, while others are still held hostage by the militant group.

Top US and Israeli national security advisers spoke about potential Rafah operation, White House says

From CNN’s Kevin Liptak

US President Joe Biden's top national security aide spoke Sunday with his Israeli counterpart about the concerns about a potential offensive in Rafah.

National security adviser Jake Sullivan "reiterated President Biden’s longstanding concerns over the potential for a major military ground operation into Rafah," the White House said.

Sullivan discussed alternatives to an invasion of the city "to ensure the defeat of Hamas everywhere in Gaza" with Tzachi Hanegbi.

"Mr. Hanegbi confirmed that Israel is taking U.S. concerns into account," a White House readout of the phone call said. The men agreed to arrange an in-person meeting of US and Israeli officials soon to discuss Rafah and other issues.

The call came on Israel's Memorial Day. Sullivan emphasized that it's the first Memorial Day since the October 7 terror attacks and discussed efforts to secure the release of hostages held by Hamas.

Israeli military says it has opened a new humanitarian aid crossing into Gaza

From CNN's Lauren Izso and Mohammed Tawfeeq

A frame taken from a video released by the IDF shows the opening of the 'Western Erez' crossing.

The Israel Defense Forces (IDF) has announced the opening of a new humanitarian aid crossing into Gaza Strip in coordination with the United States.

"In accordance with the directive of the government of Israel and in coordination with the U.S. government, the 'Western Erez' Crossing was opened in the area of the northern Gaza Strip for the transfer of humanitarian aid to the residents of the Gaza Strip," the IDF said in the statement on Sunday.

The IDF said it's part of the effort "to increase aid routes to the Gaza Strip, and to the northern Gaza Strip in particular."

This came as Israel's military on Saturday ordered the immediate evacuation of several more neighborhoods in Rafah, where it has been stepping up operations ahead of an anticipated ground offensive. About 300,000 people have already fled the southern Gazan city.

The southern crossings to the Gaza Strip have not seen aid in three days, according to the UN’s World Food Programme on Friday. Egypt said Saturday it will not coordinate on the entry of aid from the Rafah crossing, citing security concerns.

US officials continue to warn against invasion of Rafah — even as Israel presses ahead

US Secretary of State Antony Blinken speaks during a press conference in Washington, DC, on May 10.

Top American officials offered stark warnings Sunday against an Israeli invasion of Rafah, predicting that a major ground offensive in the southern Gaza city would lead to widespread civilian casualties.

The alarm bells from US Secretary of State Antony Blinken and White House national security adviser Jake Sullivan came after President Joe Biden delivered an ultimatum last week on CNN that an Israeli invasion of Rafah would cause him to pause certain weapons transfers.

Blinken and Sullivan both said Biden made the determination because he didn’t want American weapons used in what he estimates would be a bloody, ill-advised operation. At the same time, they sought to rebut claims from Republicans and pro-Israel Democrats that Biden was leaving Israel to fend for itself.

Speaking on CBS, Blinken said the US believes Israel has killed more civilians than Hamas terrorists as part of its war in Gaza. And he said the country needed to do more to mitigate civilian deaths.

“While Israel has processes, procedures, rules, regulations to try to minimize civilian harm, given the impact that this operation, this war in Gaza has had on the civilian population, those have not been applied consistently and effectively,” he said.

Despite American warnings dating back months about the wisdom of a ground invasion into Rafah, Israel appears poised to continue advancing on the city and has issued evacuation orders for some of the 1.4 million civilians estimated to be sheltering there.

Going "headlong into Rafah" could have dire consequences, Blinken warned Sunday. “Israel's on the trajectory, potentially, to inherit an insurgency with many armed Hamas left, or, if it leaves, a vacuum filled by chaos, filled by anarchy and probably refilled by Hamas,” Blinken said on NBC.

Sullivan warned an Israel operation would cause “really significant civilian casualties” while still being unlikely to eliminate Hamas. “While Israel would also be able to kill some Hamas folks, many Hamas folks would melt away because they're terrorists,” he said on ABC.

Last week, the State Department released a report finding it is “reasonable to assess” that US weapons have been used by Israeli forces in Gaza in ways that are “inconsistent” with international humanitarian law. But the report stopped short of officially saying Israel violated the law.

Exodus from Rafah continues, but some say they are too exhausted and sick to move

From Tareq El Helou in Gaza and Sarah El Sirgany and Abeer Salman in Jerusalem

Palestinians leave Rafah, Gaza with their belongings on May 11.

More people are streaming out of Rafah for other parts of Gaza following Israeli orders to civilians to leave much of eastern and central Rafah — but some are staying, too exhausted or sick to move on yet again.

An elderly man, Hassan Aboul Einien, told CNN he had not wanted to leave his home in the Shaboura refugee camp. “But now I want to because there is no one left in the camp. I want to see my wife and daughter," he said. "I’m going on foot. I don’t have money for a car. I sent my wife and daughter on foot as well."

Maher Soliman, also living at the Shaboura refugee camp, said he didn’t know where to go: "No-one is supporting us. It’s just destruction. I left home with a T-shirt." Soliman said there was no safe zone. "My 15-year-old daughter had burns over her body. There was a strike on the building next door while she was making food."

Ayman Abu Negira, who was driving a car with a broken windshield, said he was heading for Al Mawasi, an area to the north-west of Rafah to which the Israelis have instructed people to go. He said he hopes it is a safe zone, but has his doubts. "They will probably strike around it,” Negira told CNN.

Some, however, were planning to stay. An unidentified woman said: “We are not afraid. We are exhausted but we are steadfast.” Her tent stands alone in an area she says was filled with tents just few days ago.

She said she was from Khan Younis. “I wish I could go home and I hope it is still standing. I’m crying because I want to go home.”

The woman said it was tense last night. “Even the water distribution guy is afraid to come by. People are afraid to leave the tents at night to relieve themselves because they are afraid of the quadcaptors (armed Israeli drones) … All of us have hepatitis. There are lot of infections among people.”

The woman pointed to a scar under her ear and said it had been causes by a sniper’s bullet which had broken her jaw when she was trying to retrieve belongings from near Nasser hospital. “There was a window covered by a blanket and the sniper got me here.”

“Why would they target me? I was at a school. It was empty.”

Her son, 18-year old Raed Abu Salem, has a face injury which he said was caused by shrapnel from a drone attack in Khan Younis when he was trying to get water. He also lost several teeth.

“I would say how good-looking I was,” he said, when asked what he feels when he looks at his photos before the war. Now his injuries are painful and he has to eat through a syringe.

His mother said she was struggling to feed the children. “These kids haven’t eaten. We don’t have fresh water.”

Israeli forces continue operations in north and central Gaza, as well as Rafah

From CNN's Michael Schwartz

The Israeli military has said that it began operating in northern Gaza overnight, and "precise operations" are continuing in eastern Rafah and near the Rafah crossing, as well as in the area of Zeitoun in central Gaza.

The death toll in the Strip since October 7 surpassed 35,000 Sunday, with 63 people being killed in the past 24 hours, the Ministry of Health said. The figure is somewhat higher than the recent average due to the expanding military operations.

The IDF said that in Rafah, troops had “located and dismantled a number of tunnel shafts and rocket launchers ready to fire toward Israeli territory.”

It added that they also identified and eliminated ten armed Hamas terrorists.

The military action in Rafah comes ahead of a planned full-scale invasion.

The IDF also said its troops “eliminated a number of terrorists in close-quarters combat,” and an Israeli aircraft had also carried out strikes, in the Zeitoun area. It reported earlier that five Israeli soldiers had been killed in the area on Friday.

In northern Gaza, following calls Saturday to evacuate several areas, including Jabalya, the IDF said its troops began an operation "based on intelligence information regarding attempts by Hamas to reassemble its terrorist infrastructure and operatives in the area."

Israeli military says senior officer injured in Gaza

From CNN's Michael Schwartz and Tim Lister

The Israel Defense Forces says that a senior officer was injured in Gaza Friday.

It named the officer as Rear Admiral Yogev Bar-Sheshet, the Deputy Head of the Defense Establishment Comptroller Unit, and said he was “moderately injured on Friday in the Gaza Strip. He was evacuated to the hospital to receive medical treatment.”

Bar-Sheshet was injured on the same day that five Israeli soldiers were killed in the Zeitoun area of Gaza. Four of the five were 19-year old sergeants who were killed by an explosive device.

272 Israeli soldiers have been killed inside Gaza since ground operations began there.
